Twenty-two seats around a wood hearth. One menu that follows the Manitoba season, from the first pickerel of spring to the last of the orchard.

(01) The room
We cook in a former fur-trade warehouse with one fire, a smoke room and a cellar under the floorboards. Nothing on the menu is chosen before we know what the farms, the lake and the forest have this week. The cooking is slow. The room is quiet. The plates arrive one at a time, and every one of them has been near the flame.


The menu changes about every five weeks. We write it on the Monday we close, after the suppliers call.

i.
Nine courses over about three hours. Tables of two to six, seatings from 17:30. Dietary needs are cooked for, not worked around — tell us when you book.

ii.
Eight stools facing the hearth. Eleven courses, two of them only cooked here, plated in front of you. Friday and Saturday, one seating at 19:45.

iii.
A private room behind the cellar for eight to fourteen guests. We build the menu with you two weeks ahead — birthdays, rehearsal dinners, quiet business.

iv.
Six seats, no reservations. Smoked cocktails, wine by the glass from the pairing list and three late snacks from the hearth until 23:00.

(06) Reservations
Bookings open thirty days ahead at 10:00. We hold a card for $50 per guest; it is released after your visit, or charged if you cancel within 48 hours.
(07) Visit
Down the stairs beside the bookbinder, Exchange District. Street parking on Albert after 18:00; the Arthur Street lot is two minutes away.
